Tropical Sun Blackeye Beans, 500g


Black-eye beans have a creamy flavour and a distinctive black ‘scar’ where they were joined to the pod. They’re used in many African and American recipes. In the southern states, Hoppin’ John is a dish of slow-simmered black-eyed beans with rice and pork, typically served on New Year’s Day.

To make black-eye bean hummus, blend cooked beans with minced garlic, olive oil, ground cumin, salt, tahini and lemon juice. Once smooth, serve with tortilla chips or toasted pita bread.

For best results, soak the beans overnight and simmer in water or chicken stock until tender. The beans can also be cooked in a pressure cooker or slow cooker.
