Soft silken tofu has a deliciously smooth texture, similar to custard – so is usually eaten with a spoon rather than chopsticks. Soft silken tofu is often used as a lactose-free substitute when making smoothies or baking. Soft silken tofu can even form a South Asian-style breakfast, flavoured with sweet ingredients such as syrup or molasses as well as savoury ingredients like chilli, soy or spring onions.
