The MatuSalam is made by La Fattoria Di Parma in Parma, Italy's home of cured meat. The family have been curing slow-aged artisan products for over 150 years, and every product they produce is worth tasting.
This MatuSalam salami was one of the first we tasted from La Fattoria di Parma in the Sous Chef office - with one of the Spanish team members closing their eyes, and exclaiming "This is how cured meats should really taste... delicious!".
To serve traditionally, cut your salami on a diagonal angle in slices the same thickness as a peppercorn.
