This smoked chorizo dulce has a milder, sweeter flavour than the spicy ‘picante’ version of the famous Spanish sausage. Made by a small family business in Asturias in northern Spain, it is a blend of lean pork, pork belly and beef, flavoured with paprika, garlic, parsley and spices. This cooking chorizo is oak-smoked rather than dry-cured, giving it a distinctive smoky taste.

Sauté this chorizo with garlic and red wine for a speedy tapas dish to serve with crusty bread. It adds rich, meaty depth of flavour to pasta sauces, rice dishes and Spanish-inspired soups and stews. You can also slice it into coin-shaped chunks to thread onto skewers with peppers, chicken or white fish.
