Tempus Smoked Coppa (Capocollo), 60g

Description

Tempus’ smoked coppa is a fantastic gift for charcuterie connoisseurs. Made from pork collar, coppa is known for its distinctive marbling and excellent balance of meat to fat. It's also known as capocollo.

It’s tender, almost melting in the mouth, and has a rich, robust flavour. A great accompaniment for raclette or fondue, as well as a delicious addition to charcuterie boards and grazing plates.

Tempus gently smokes their pork over chestnut wood to give it a mellow smokiness that doesn’t overwhelm the meat. Once smoked, it is then air-dried for 3-4 months. 

The smoked coppa is flavoured simply with black pepper to allow the flavour of the pork to take centre stage. Tempus recommends pairing it with off-dry Rieslings, stouts and sherries.

They use ex-breeding sows and ex-dairy cows which have fantastic marbling and intense flavours that you won’t find in younger, smaller animals. Their meat is butchered, cured and aged at their purpose-built facility in Weybridge.
