Description

Sambal oelek is a spicy Indonesian condiment to drizzle over rice, pair with cold noodle salads, or serve on the side of lamb martabak - an Indonesian pastry snack. 

There are hundreds of varieties of sambal - sambal oelek takes its name from ulek, the pestle and mortar in which the sauce is typically made. 

Unlike other sambals which may be mixed with dried shrimp, vinegar or garlic, this sambal is simply made with red chilli, water and salt. Sambal oelek acts as a base for other sambals, whereas sambal manis is milder and slightly sweet.
