Short Dated Potassium Sorbate, 100g

Description

Use potassium sorbate when making cheese and wine to prohibit the growth of mould and microbes, leading to a longer shelf life. This crystalline salt acts as a preservative in many foods as well as preventing refermentation in sparkling wines.

Potassium sorbate is a key ingredient in winemaking, in particular sweeter wines. When existing yeast is in the presence of sugar, they are likely to multiply, however the addition of the salt prevents another round of fermentation occurring and stabilises the wine.

Follow the below instructions for using potassium sorbate:

  • Typical dosage for food applications is 0.25g to 1g per 1 kg. Do not use it in baked products containing yeast. 
  • For fruit drinks and wine the amount required depends upon the alcohol content (12% to 14% alcohol would require 0.07g per litre). Lower alcohol content would require more.
