Xanthan gum can be used to keep pastry crisp and flaky and ice cream silky smooth. This extra fine, natural powder can be used as a thickener, stabiliser, emulsifier and foaming agent. 

Using xanthan gum in pastry prevents water from leaking, meaning there won’t be a soggy bottom in sight and prevents ice crystals forming in ice cream and sorbet.

For salad dressing and sauces, xanthan gum is great for preventing the separation of oil. This will give you a well-blended dressing for Greek, caesar and grain salads.
