Lottie Shaw’s parkin cake is the ultimate wintery tea time treat. Made with oats, treacle and plenty of ginger, this Yorkshire parkin is irresistibly sticky and wonderfully warming.
Serve slices of parkin cake on its own or with a bit of butter with your afternoon cup of tea. Or drizzle with warm caramel sauce to make an indulgent dessert.
Lottie Shaw’s parkin cake is made to a one-hundred-year-old family recipe.
Lottie Shaw is at the helm of a Yorkshire-based bakery that’s been in her family for four generations. Many of Lottie’s treats are made to traditional recipes handed down by her great grandma. At Lottie Shaw’s bakery, they aim to bring a sense of ‘just like grandma used to bake’ to all their creations.
