Grass jelly cubes are a popular Asian ingredient in desserts and even drinks. The dark, chewy cubes have a mild bitter-herbal flavour, and are often served with sugar syrup, evaporated milk, or with chunks of fresh fruit.

Across China and Southeast Asia, grass jelly can also be found on top of shaved ice desserts in the summer – this is a little bit like a granita, and you can easily tailor it to your tastes with flavoured syrups and different toppings.

Smaller pieces of grass jelly are even added to drinks, similar to the way that tapioca pearls are added to bubble tea. Sweet, milky, tea-like drinks are probably the most popular, but the grass jelly also works well with fruit juices.
