Description

Salted sakura leaves are edible cherry tree leaves used to make sakura mochi and other springtime dishes in Japan. The delicate leaves are used in confectionery known as wagashi and also in savoury dishes to celebrate the cherry blossom season. During this fleeting season, friends and families travel across the country to picnic beneath the flowering cherry trees and enjoy their beautiful pink blooms.

Salted sakura leaves are used to flavour rice and to wrap sushi and onigiri (rice balls). They have a subtle floral flavour and a slight saltiness that can be reduced by carefully washing them in cool water. Cherry tree leaves are also used to wrap a springtime treat called sakura mochi - pale pink glutinous rice balls filled with sweet red bean paste.
