If you want to enjoy authentic Japanese cuisine, it’s important to learn about the noodles that make it so delicious. In Japan, there are three main noodle types you will encounter: ramen, udon and soba noodles.
How many types of Japanese noodles are there?
There are many different types of noodles used in Japanese cuisine. Each type has a different thickness, shape and flavour and is used in a unique way. Some of the most popular include;
- Soba noodles are made from buckwheat flour and are thin and light brown in colour.
- Udon noodles are made from wheat flour and are thick and white.
- Ramen noodles are also made from wheat flour and are thin and yellow.
- Somen noodles are the thinnest of all the noodles and are made from wheat flour.
- Shirataki noodles, also known as konjac noodles, are long white noodles made from glucomannan, a type of fibre from the root of the konjac plant.
What is Japan's most popular noodle?
Ramen noodles are probably Japan’s favourite noodle as they are used in Japan's most popular noodle dish - ramen. Ramen consists of wheat noodles in a meat or fish-based broth. The broth is usually flavoured with soy sauce, miso, or salt and can be topped with various meats, vegetables, and eggs.
Popular dishes that use Japanese noodles
Some of the most popular Japanese noodle dishes;
- Yaki Udon - a simple stir-fried noodle dish made with udon noodles, a soy-based stir fry sauce and vegetables, most commonly shiitake mushrooms and white cabbage.
- Miso ramen - one of Japan’s most popular ramen dishes served with ramen noodles, toppings and a miso broth
- Zaru soba - commonly eaten in the summer months, zaru soba is a cold noodle dish made with soba noodles and a tsuyu dipping sauce.
- Yakisoba - stir-fried noodle dish made with vegetables and a sweet-and-savoury sauce. Typically made with Chinese-style noodles made from buckwheat.
- Tokyo noodles - whilst the name might deceive you, this dish is actually a type of ramen. It became very popular in the West and is typically made with a pork shoyu broth and curly noodles.
