Etern olive oil is made from Farga olives that grow in Catalonia, giving this golden-hued Spanish extra virgin olive oil fresh, grassy notes. On the nose, this oil is rich with green olives, with a very mild peppery aftertaste and smooth mouthfeel.
The Territori Sénia where this olive is produced is home to over 5,000 ancient olive trees - each one at least 1,000 years old. Only 800 of these trees grow olives which can be used to make oil which means only 8,000 litres of the golden liquid can be produced each year.
To make this oil, olives are harvested when they reach peak ripeness in October, November, and occasionally December. The harvesting is done manually. Once collected, the olives are taken to the mill on the same day, before being cold extracted, allowing for preservation of the olives freshly picked aromas and flavours.
Etern olive oil is then filtered, stored in stainless steel tanks to protect against the light before being packed into bottles, each one labelled by hand, making each bottle extra special.
This fruity oil of medium to high intensity is lightly spicy and sweet. Pair with fresh burrata, black truffle, steamed fish or indulgent chocolate desserts.
