Discover the rich, complex flavour of artisanal Balsamic Vinegar of Modena. The Sous Chef Balsamic Vinegar of Modena IGP is made by a family producer, now in its 17th generation of harvesting, pressing and aging grapes in Modena. 

Sun-ripened grapes are pressed and aged for at least 12 years - creating a rich, thick balsamic vinegar. It has deep sweet-sour notes of prune, raisin and smoky oak.

Grapes are sun-ripened on the vine long enough to develop a rich raisin sweetness. They are harvested and pressed, then simmered very gently for a full 24 hours. 

The resulting glossy thick and caramelised juice is the precious grape must. Grape must is then aged in wooden barrels, which bring their own oaky rich flavour.

As the balsamic vinegar ages over many years, it slowly evaporates - concentrating the flavour and bringing lovely complex notes of smoky sweetness.

In fact, the barrels used to make this incredible Italian condiment are never emptied. The master 'vinegar taster' artfully blends different barrels, constantly adjusting levels and sampling the contents to create the most delicious blend possible.

So while the balsamic in your bottle is at least 12 years old, it's possibly blended with some barrels that are even older. This is a fabulous balsamic that brings instant depth and interest to both sweet and savoury dishes.
