Ozeki junmai sake karakuchi dry is a crisp and clear rice wine to sip with tempura and sushi rolls. Produced by Ozeki, one of Japan’s best-known brands, this variety is made with only rice, water and koji – there’s no added sugar or alcohol.
Junmai sake is best drunk at room temperature, or very gently warmed to between 30 and 40°C. Sip this dry sake with prawn tempura and spring rolls or add a splash to grilled oysters to add a fruity depth of flavour.
Junmai sakes are characterised by their rice polishing rate of 70%. The polishing rate is how much rice and outer rice bran is polished away during the milling process. The higher the polishing rate, the more intense the rice flavours in the sake. Junmai sakes are famed as flavoursome and characterful sakes which make excellent companions to food.
