Description

Martin Pouret Orléans White Wine Vinegar is made from French white wine using the traditional Orléans method. Slow fermentation and ageing in oak barrels are at the heart of its production, giving this everyday seasoning a craft-led character. Expect refined, wine-based acidity that’s worth making a feature of in dressings and sauces.

Whisk it with Dijon mustard and olive oil for a classic vinaigrette, or use a splash to deglaze the pan after frying chicken, adding stock to make a simple sauce.

  • Made from French white wine using traditional methods
  • Slowly fermented and aged in oak barrels
  • Refined, wine-based acidity for vinaigrettes and pan sauces

Meet the maker: Martin Pouret

In Renaissance Orléans, wine travelling along the Loire could undergo a second fermentation before it reached its destination. Local vinegar masters transformed wines set aside on the quays into vinegar, helping to establish a trade that once supported as many as 400 makers in the city. Martin-Pouret has continued that tradition since 1797 and describes itself as the last remaining house of Orléans vinegar and mustard makers.

The wines now come from selected French wine regions rather than boats on the Loire, but Martin-Pouret still ferments and ages its vinegars in oak barrels. They spend an average of 13 months in barrel, with some ageing for as long as 20 years. That vinegar is also central to its mustard-making: Loire Valley mustard seeds are soaked in the house’s white-wine vinegar, then slowly ground with a stone wheel. Mustard may bring Dijon to mind, but Orléans has a tradition of its own.
