The lemon press or lemon squeezer is both bartenders' and chefs' favoured way to juice lemons. Just place half a lemon in one side of the press (the cut side against the holes in the press) - and squeeze. The lemon turns inside out and the juice runs out in seconds. Then quickly rinse the lemon juicer under the tap to clean.
This style of lemon press is often called a Mexican elbow.
