Cool Chile Co’s de arbol chillies will add fiery, smoky heat to your favourite Mexican dishes. They’re great in homemade hot sauce, fresh salsa and classic Mexican adobo sauce.

Particularly popular in Guadalajara, arbol chillies have an intense, clean heat and a nutty, grassy flavour. Unlike other chillies, they retain their bright red colour after being dried. You can use them to make flavoured oil and homemade chilli powder to add to marinades, soups and stews. For a simple hot sauce, lightly roast the chillies with cumin seeds and blend with garlic, salt and cider vinegar. It’s delicious splashed over fried eggs and fish tacos.

How to use de arbol chillies

Wipe clean and remove their stems, then lightly toast in a dry frying pan to release their flavour. Once you can smell their spicy aroma, remove from the heat and chop or blend them into your sauce or stew. For a more subtle heat, add them whole during the cooking process and remove before serving. Always wash your hands when handling chillies!
