Although aniseed is a ‘love or hate’ flavour in the confectionery world, using these seeds allows a more gentle hint of fennel-like liquorice flavours to lace a wide variety of dishes. Try sprinkling a little aniseed over root vegetables before roasting, use in a cure for smoked salmon or a dry rub for pork. Also try sprinkling a few aniseed seeds on sweet or savoury biscuits to serve with cheese.
