Terre Exotique’s Espelette chilli pepper PDO is an extra special chilli powder from the Basque mountains, with aromatic, slightly spicy notes. The chilli pepper takes its name from the French village of Espelette, and it’s PDO (Protected Designation of Origin) status means the pepper has to be produced in a certain area and follow certain specifications - currently only 10 farmers hold the secret to how it’s produced!

The pepper is harvested between the end of August and October. The red fruits are oven-dried before being hung outside local houses to dry out further. The final stage of production involves the peppers being ground to a powder.

With aromas of tomato and hay, this spicy, fruity pepper is key in Southwestern French cooking - it’s added to anything from omelettes to softly scrambled eggs, roasted vegetable salads and even chocolate ganache.

How is espelette pepper used?

Traditionally Espelette pepper, or piment d'Espelette, is used as part of the curing process for Bayonne hams, as well as spicing honey or bread and even adding a kick to hot chocolate or liqueurs. Espelette is also used as the starring ingredient in lots of traditional Basque dishes – from pipérade fish stew to chicken basquaise with piperade.
