This sweet smoked paprika, or pimentón, is ground from sweet red peppers grown in the Extremadura region south-west of Madrid. The Spanish paprika peppers are oak-smoked, infusing them with woody notes, and then ground in stone mills to keep temperatures low and help retain natural flavours. This distinctive sweet smoked paprika has earned itself "Pimentón de la Vera" DOP status (Protected Denomination of Origin.) La Chinata sweet smoked paprika has a slightly coarser grind than Santa Domingo sweet smoked paprika.
Sweet smoked Spanish paprika introduces rich colour and flavour to paellas, as well as adding a warm smoky heat to roast potatoes and butternut squash and flavouring chicken marinades.
