Mix Mermaid’s Bite with oil to marinate squid, monkfish and fillets of sea bass. You can also add a pinch to seafood soups and stews. The spice blend has a hint of chilli that adds bite to your recipe.

For next-level fish goujons, add a pinch of Mermaid’s Bite to your flour or breadcrumbs. Or, mix it into tempura batter for crunchy fried vegetables or prawns. The fresh, herbal flavours also work well with poultry.

To avoid burning the delicate herbs, Mill & Mortar recommends cooking with indirect heat. You can also wrap your food in foil to lock in the flavours.
