Description

The Original Black Garlic Pickle is a tangy, gently spicy relish made with whole black garlic cloves slow-cooked for 45 days. The cloves become soft and absorb the surrounding spices, adding deep, sweet-savoury flavour. Dates and brown sugar balance the tang, while ginger, cumin and chilli bring aromatic warmth.

Spoon it alongside a wedge of mature cheese, tuck it into a ploughman’s sandwich or serve with pâté to balance its richness.

  • Whole black garlic cloves slow-cooked for 45 days
  • Sweet, tangy and savoury, with gentle chilli warmth
  • A relish for cheese boards, sandwiches and pâté

Meet the maker: The Original Black Garlic

The Original Black Garlic began when Katy Heath discovered aged garlic in Korea, where it was traditionally eaten as a health snack. Fascinated by its rich, complex flavour, she began experimenting in her North London kitchen. Hundreds of trials later, she had perfected a method for turning everyday garlic into something extraordinary.

Today, the company makes its black garlic in Bedfordshire, slowly ageing fresh cloves for two to three weeks using heat and humidity. The result is soft, sticky garlic with layers of mellow sweetness, fig, molasses and balsamic, balanced by a deep savoury richness. That same curiosity has inspired black lemon slices and powders, made by slowly ageing fresh lemons to bring out bright citrus notes, gentle bitterness and a hint of spice. From rich, savoury sauces to fragrant marinades and cocktails, these are ingredients that bring surprising new flavours to familiar dishes.
