Meet the maker: Sabadi

Sabadì began with a holiday in Sicily, when Simone Sabaini fell in love with the beautiful town of Modica and its extraordinary chocolate. Originally from Verona, Simone left a career in finance to follow his passion for good food and a slower way of life. He named his chocolate company Sabadì, meaning 'a day that doesn't exist' – an imaginary day when we slow down, savour life's little pleasures and remember what really matters.

Modica is famous for its distinctive chocolate, made at low temperatures to preserve the cocoa's rich aromas and a delicate, sugary crunch. Simone takes this centuries-old tradition a little further, working the chocolate more slowly to create a finer texture that melts gently on the tongue. Using organic cocoa from Ecuador, carefully sourced sugars and ingredients from fair trade producers, Sabadì makes chocolate with remarkable depth of flavour. A wonderful reason to slow down and savour each square.
