At Antica Pasticceria Muzzi in Foligno, Umbria, one ingredient has received daily attention for more than 80 years: the sourdough starter. Made from wheat flour and water, it’s at the heart of the pastry maker’s naturally leavened baking. Keeping it going is a daily commitment, not just a matter of bringing out an old recipe at Christmas.

The recipes have their own history, too. Muzzi’s classic panettone follows a family recipe passed down through generations, with slow leavening giving the dough its soft texture and fragrance. Madagascar vanilla pods and candied orange peel made from fresh fruit bring flavour to match.
