Drizzle Moulin Castelas AOP Vallée des Baux organic olive oil over grilled asparagus. It’s green-gold in colour and has an intense fruity flavour.
This EVOO is made from olives grown organically on the slopes of Les Alpilles. It’s an outstanding example of French olive oil. Connoisseurs will enjoy its complex but harmonious fragrance. Expect aromas of green almonds and freshly cut hay.
On the palate, this olive oil is vegetal and beautifully balanced. There are notes of artichoke, rocket and apple. It finishes with a hint of bitterness and peppery heat.
Moulin Castelas’ organic olive oil has won awards in Paris and New York. It was rated 96/100 in the respected Flos Olei guide. Use it raw to appreciate its bold, fruity flavour.
Swirl the oil over soups and grilled sea bass. It’s delicious with vegetables, both cooked and raw.
About Moulin Castelas
Moulin Castelas is an olive oil producer in Les Baux-de-Provence, France. It was founded by Catherine and Jean-Benoît Hugues. The couple returned to their native Provence in 1997 after living in Arizona for 15 years. They now cultivate 270 acres of AOP (Appellation d’Origine Protégée) olive groves.
Moulin Castelas makes outstanding oil from Provençal olive varieties. The olives are cold-pressed within a few hours of being picked. This preserves their quality and character.
