Cardamom is a popular ingredient in Indian cuisine. It’s used to flavour everything from kulfi to chicken korma. In the Middle East, you’ll find cardamom in fragrant pilafs and hot drinks.
If you’re using whole cardamom, try bruising the pods before adding them to your dish. This allows it to impart its flavour more easily. You can also use a mortar or spice grinder to turn the seeds into a fine powder.
Cardamom has a sweet, peppery flavour. You can use it in savoury recipes or use it to flavour cookies and custard.
