Oregano is a key ingredient in Mediterranean cooking. Add the leaves to a rich tomato sauce for pasta and keftedes. Or, add whole branches to tray bakes with chicken and potatoes. You can also use the branches to make oregano-infused olive oil.

Oregano has an earthy, herbal flavour. You will find it in all kinds of Greek dishes, from souvlaki to stifado. Try adding it to a mixture of olive oil, garlic and lemon juice to marinate chicken and seafood.
