The seeds are dried naturally to intensify their aroma. They are a staple in Sicilian cuisine, used to flavour bread, sauces and more. Try lightly toasting the seeds before adding to marinades or focaccia dough.

Fennel seeds have a fresh, sweet taste with notes of anise. In Sicily, they’re used to flavour sausages and pasta dishes. The fragrant seeds are a key ingredient in maccu di fave, a rustic fava bean soup.

Add a pinch of ground fennel to pasta con le sarde (spaghetti with anchovies). Or, scatter whole seeds over a tray of roast potatoes. They’re fantastic in marinades for fish and pork.
