Travellers heading from northern Italy to the Adriatic Riviera made Flamigni’s pastry shops a stopping point along the way. The first opened in Forlì’s Piazza Saffi in 1930, founded by brothers Armando, Lieto and Aurelio Flamigni. Within a few years, their shops had multiplied, giving holidaymakers plenty of opportunities to pick up something sweet.

Nougat and panettone are the two passions at the heart of this Romagna maker. For its panettone, Flamigni still uses a mother yeast dating from the 1930s as the only raising agent, repeatedly refreshing it with flour and water. Its nougat-making has its own wonderfully hands-on traditions: after cooking, the mixture for its wafer-thin nougat flakes is rolled out by hand on large marble tables.
