Fabbrica della Pasta IGP Paccheri Rigati, 500g

Description

Paccheri rigati is a large, tubular pasta shape from Naples. It has a hollow centre that traps rich sauces. You can serve it with seafood or a simple tomato sauce.

In Campania, many families sit down to a bowl of paccheri on Sundays. It’s served with slow cooked ragu alla Napoletana. This rich sauce features chunks of tender beef or pork. Choose cuts that tenderise over time, like shin or short ribs.

Paccheri is also suitable for pasta bakes. Top with mozzarella and carry it to the table while the cheese is still bubbling.

La Fabbrica della Pasta uses traditional recipes passed down through generations. Their pasta is slow-dried at low temperatures and extruded through bronze dies, resulting in a denser, stronger pasta. This gives the pasta a rough surface that holds sauces well.

Cooking time: 13 minutes.

In 2012, La Fabbrica della Pasta became the first pasta factory to receive IGP status. IGP stands for Indicazione Geografica Protetta (Protected Geographical Indication). It is assigned to products with a quality or reputation dependent on their geographical origin.

Store in a cool, dry place.
