Keep up with top chefs and use Escuminac yellow birch syrup to enhance desserts, side dishes and sauces. Approximately 130 litres of yellow birch tree sap are needed to produce just one litre of this rare syrup, and only around 1500 litres of it are produced each season.

The rich, acidic sweetness of the syrup means you can use it in place of an aged balsamic in some recipes. Its intensity means you only need to use a very small amount to bring big flavours to salad dressings, marinades, glazes and cocktails.

Escuminac are producers of the true ‘terroir’ maple syrup. The regional climate and unique soil composition around the Baie-de Chaleurs and Escuminac regions in Quebec has fostered the growth of vast centennial maple and yellow birch forests – forests where the trees are over one-hundred years old – and the sap produced by these trees makes Escuminac’s premium organic syrup.
