Trofie is a short, twisted pasta shape from Liguria. It’s typically served with basil pesto, potatoes and green beans. This dish is known as trofie al pesto Genovese.

In northern Italy, trofie is also served with salsa di noci. This is a creamy sauce made from walnuts, Parmesan, bread and garlic. Top with more cheese and savour its rich, nutty flavour.

Trofie is also great for pasta bakes and salads. Pair it with salami, mozzarella and a tangy dressing for a no-fuss lunch.
