Description

Rigatoni is a tubular pasta with ridges that trap your sauce. Made from British-grown spelt, this pasta can stand up to big, bold flavours. Pair it with ragu alla Bolognese or a spicy sauce made with ‘nduja and San Marzano tomatoes. 

Originating from Rome, rigatoni is a great choice for carbonara. It’s easier to eat than spaghetti so there’s less chance of staining your shirt. The silky sauce clings to its ridges and bits of guanciale get stuck inside the tubes.

Leftover rigatoni is a gift from the gods. Top it with mozzarella and breadcrumbs to make a satisfying pasta bake. The tubes crisp up under the grill as the cheese melts.

Northern Pasta Co. uses bronze dies to extrude their pasta. This is a traditional technique that gives the pasta its rough texture. It helps sauces to cling so that every mouthful is full of flavour.
