Description

Gigli is a flower-like pasta shape that originated in Tuscany. With delicate, frilly edges, it’s almost too pretty to eat. Gigli is the Italian word for ‘lillies’. 

This unique pasta shape is produced by the Northern Pasta Co. Made from British-grown spelt, it has a subtle nutty flavour. You can pair it with your favourite sauces or even use it in a pasta bake.

The fluted edges trap creamy sauces and pesto. In Tuscany, it’s often served with a ragu made from wild boar. For a meat-free version, make your sauce with oyster mushrooms.

We like to pair gigli with lighter, delicate sauces. Try making a cream sauce flavoured with lemon and roasted garlic. You can add peas, chopped ham and anything else you fancy. A handful of wild garlic would be wonderful.

Northern Pasta Co. uses bronze dies to extrude their pasta. This is a traditional technique that gives the pasta its rough texture. It helps sauces to cling so that every mouthful is full of flavour.
