Make the perfect thin and crispy French crepes with the 30cm De Buyer Mineral B crepe pan. Heat the pan on a medium-high heat and lightly coat the whole surface with cooking oil - use a brush or piece of kitchen paper to get an even coating. Slowly pour a ladle of batter into the middle of the pan and swirl to coat the whole base. The pan has very low sides so it’s easy to slide the finished crepe from pan to plate.
De Buyer’s Mineral B range of iron pans are coated with natural beeswax. This provides protection against rust. The beeswax also gives Mineral B pans enhanced non-stick properties on the first use compared to other iron pans.
The De Buyer Mineral B crepe pan requires proper seasoning to keep it in top condition. Before the first use, use hot water and a soft sponge to remove the beeswax coating. Then season the pan – pour in just enough oil to coat the bottom of the pan and bring to a high temperature. When a smoky-haze appears remove it from the heat and wipe well with kitchen towel. Now the pan is ready to use.
Always ensure there is enough oil or natural fat (e.g. butter, lard) in the pan when using, then deglaze with hot water and wipe with a paper towel after use. If the pan needs washing, ensure it is completely dried and lightly-oiled before storing. Follow these steps and your pan will build up a dark patina that increases the pan’s non-stick properties. The more you use it, the more non-stick it will become.
This Mineral B crepe pan is 30cm in diameter with a 21.5cm handle. It is suitable for all cooking surfaces including induction.
Please note: due to the manufacturing process there may be scratches on the inner surface of the pan. This does not affect the quality of the product and will disappear with proper seasoning over time.
