When using this powder to make gels, the gels can be frozen and thaw while keeping their consistency.
Carrageenan iota strengthens when used with dairy products, great for milk and dairy-based puddings such as crème brûlée, crème caramel and panna cotta.
This powder is a wonderful alternative to using gelatine.
Follow the below instructions for using carrageenan iota:
- Dosage Rates: 0.2% - 2.0%.
- Carrageenan forms into a gel with potassium and calcium salts.
- To make the gel, pour the powder into the water/solution.
- Heat up to 70°C until completely dissolved while constantly stirring.
- The gel forms as the solution cools.
- Ph Solubility: 4.5 – 10.
