Arborio rice is a type of short-grain risotto rice from the Piedmont region of northern Italy. The pearly, rounded grains release their starch as they cook to give risotto its signature creaminess. The rice grains have a firm, chewy texture that retains its bite once cooked. Arborio rice is typically used to make risotto but can also be added to soups or used to make rice pudding and paella.

When making risotto, add the hot stock gradually and allow the rice to fully absorb it before adding more liquid. Finish your risotto with a knob of butter and a generous handful of Parmesan cheese.. This will give your dish a creamy, indulgent taste and texture.
