The olives are harvested at peak freshness in early October. They are sourced from the Los Robledos estate in Jaén, Andalucía. The climate and mineral-rich soil provide ideal growing conditions for Picual olives.

The olives are harvested at night and processed soon after to preserve their quality. The result is a green-gold oil with a grassy, full-bodied flavour. There are notes of artichoke and green tomato, followed by a peppery finish.

This extra virgin olive oil is best used at low temperatures. Serve it as a dip for fresh bread so dinner guests can experience its complexity. The subtle bitterness works beautifully in dressings and sauces like romesco and chimichurri.

Try swirling this exceptional oil over vegetable soups and tomato salads. It’s a delicious finishing oil for steaks and seafood.
