Dating back to the 1700s, amaretti biscuits were invented in Saronno, a city north of Milan. Made with almonds, sugar, apricot kernels and eggs, they are famous for their intense almond flavour and aroma.

There are two main types: amaretti morbidi, which are soft and chewy, and amaretti croccanti, which are crisp and crunchy. This version is soft with a moist, marzipan-like centre.
