Payst Yellow Thai Curry Paste is a fresh Gaeng Gari curry base made for warm, aromatic suppers. Turmeric gives it its golden colour, while cumin, coriander, mace and white pepper bring gentle warmth. Fry the paste briefly in oil until the lemongrass and spices become fragrant. Stir in coconut milk and a little stock, then add chicken, prawns or vegetables. Simmer until tender and spoon over jasmine rice. The paste is already seasoned with fish sauce and sugar, so taste before adding anything else.
