To prepare, fill the bottle to the neck with your chosen spirit, shake for one minute and refrigerate for six hours. For each cocktail, shake 50ml of the infusion with 150ml pineapple juice and ice for ten seconds, then pour into a coupe glass. Add fresh passionfruit as an optional garnish. You’ll need to supply the spirit, pineapple juice, ice and cocktail shaker.
