Mung beans are a small green bean with a creamy, nutty flavour. They are used widely in India in curries and mung dal (or moong dal). Use the mung beans to make a pesarattu dosa by blending soaked beans with spices and chilli to make a batter, then frying as a thin and crispy pancake.
Mung beans can also be added to casseroles and stews. To cook, soak the beans in water for 12 hours, then rinse and drain.
