Moulin Castelas AOP Vallée des Baux organic virgin black olive oil is produced in Provence. It’s made from four varieties of black olives which are native to the region. 

The olives are harvested when they’re fully ripe and stored in an airtight environment. Gentle fermentation intensifies their rich flavour. The olives are then cold-pressed to preserve their character and aroma.

If you’ve never tasted a black olive oil, this is an excellent place to start. The oil has an intense black olive flavour with notes of cocoa and dried fruit. It lingers on your palate and gives way to a peppery finish.

Maison Castelas organic black olive oil is best used raw. Swirl it over ratatouille and salad Niçoise. It’s fantastic on pizza and vegetable gratins. Use it to prepare carpaccio or make silky mayonnaise.

Moulin Castelas is an olive oil producer in Les Baux-de-Provence, France. It was founded by Catherine and Jean-Benoît Hugues. The couple returned to their native Provence in 1997 after living in Arizona for 15 years. They now cultivate 270 acres of AOP (Appellation d’Origine Protégée) olive groves.

Moulin Castelas makes outstanding oil from Provençal olive varieties. The olives are cold-pressed within a few hours of being picked. This preserves their quality and character.
