• Black salt - Activated charcoal gives this salt its dark, dramatic colour. Sprinkle it over canapés and spaghetti carbonara. It adds saline tang and a touch of theatre to your dish.
• Citrus salt - This salt is infused with lemon oil and lemon thyme. The bright, zesty flavour is wonderful with fish and seafood. Scatter the flakes over roasted monkfish or use it to season crispy squid.
