Lebkuchen are traditional German biscuits, said to have been invented by medieval monks. With a soft texture somewhere between a cake and a cookie, these spiced biscuits are similar to gingerbread but richer and made with honey instead of molasses. Speculoos biscuits are shortcrust cookies flavoured with brown sugar and warming spices. Originally from Belgium, variations of the spiced biscuit are popular all over Europe and beyond. They are crisp and buttery with a rich, caramelised flavour that is similar to gingerbread.
