Meet the maker: Gustificio

Gustificio is the creation of Italian chef Andrea Poli, whose love of traditional baking has made his kitchen in Carmignano di Brenta, near Padua, a destination for exceptional panettone. His wonderfully soft, fragrant loaves are made with natural sourdough starter and a slow, 48-hour process that gives the dough time to develop its delicate flavour and airy texture.

There's extraordinary care in the ingredients, too. Think fragrant candied orange peel from Sicilian pastry master Corrado Assenza, wildflower honey from the Brenta region and carefully chosen Italian flour. Alongside classic panettone, Gustificio creates inventive combinations of apricot, caramel and walnuts, or rich chocolate with a crisp cookie topping. The bakery's dedication to flavour and craftsmanship has earned recognition from respected Italian food guide Gambero Rosso.
