Meet the maker: Fabbri

Fabbri’s story starts with a change of direction at 45. In 1905, Gennaro Fabbri took over an old grocery shop with a wine cellar in Portomaggiore, near Ferrara, and turned it into a liqueur business. But it was his wife, Rachele, who inspired what became the family’s best-known creation: Amarena sour cherries in syrup, from a recipe dating to 1915.

Today, the fourth and fifth generations of the Fabbri family run the business, and Rachele’s recipe remains unchanged. The cherries undergo a light candying process, with carefully controlled temperature and sugar concentration to retain a crisp exterior and tender centre. Their familiar blue-and-white jar has a story, too: its floral decoration takes inspiration from Chinese porcelain.
