De Buyer Stainless Steel Chinois 1.5mm Mesh

Description

The De Buyer stainless-steel chinois with 1.5mm mesh is an excellent utensil for straining soups, sauces and gravies. Also known as a conical strainer or Chiense strainer, it removes large pieces of food or fish bones from stock, or whole herbs and spices from soups for smooth results.

The standard 1.5mm perforations are suitable for straining most preparations. You can line the chinois with muslin for pip-free jams and jellies, or for clarifying consommés.

The De Buyer stainless-steel chinois comes in three sizes:

  • 14cm diameter x 10.5cm deep – total length 30cm including handle
  • 18cm diameter x 16cm deep – total length 38cm including handle
  • 20cm diameter x 18cm deep – total length 40cm including handle

De Buyer’s chinois is rigid stainless steel, not mesh like many other chinoises. This means it’s resistant to deformation and very robust, and be much quicker to wash – ideal for busy professional kitchens where it will get a lot of use.

The chinois has two brackets at different heights, so you can rest it in a bowl or pan for greater stability and ease of use.
