Meet the maker: Michel Cluizel

Michel Cluizel began in a pastry kitchen in Damville, Normandy, in 1948. Former pastry chefs Marc and Marcelle Cluizel started the business at home; today, the third and fourth generations of the family carry it on. Chocolate-making is still rooted in Damville, where the family’s expertise extends from roasting cocoa beans to making pralines and finished chocolates.

Cluizel works directly with cocoa growers and is one of the few makers to transform the beans into cocoa paste itself, rather than starting with ready-made chocolate. Its single-plantation range gives that approach a particularly delicious purpose: each chocolate uses cocoa from one named plantation, allowing the character of the place where it grew to shape the flavour.
